Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter cold, cubed
Filling
  • 2 large eggs
  • 1 cup Meyer lemon juice freshly squeezed
  • Zest of 2 Meyer lemons
  • 1 cup granulated sugar for filling
  • powdered sugar for dusting

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish or line it with parchment paper.
  2. In a bowl, mix flour and 1/2 cup sugar. Cut in cold butter until crumbly. Press the mixture into the bottom of the prepared dish.
  3. Bake crust for 15 minutes until lightly golden.
  4. While the crust bakes, whisk together eggs and remaining sugar until smooth. Stir in Meyer lemon juice and zest.
  5. Pour the filling over the baked crust and return to oven; bake for an additional 20-25 minutes until set.
  6. Cool completely before dusting with powdered sugar and slicing into squares.
