Preparation
- Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish or line it with parchment paper.
- In a bowl, mix flour and 1/2 cup sugar. Cut in cold butter until crumbly. Press the mixture into the bottom of the prepared dish.
- Bake crust for 15 minutes until lightly golden.
- While the crust bakes, whisk together eggs and remaining sugar until smooth. Stir in Meyer lemon juice and zest.
- Pour the filling over the baked crust and return to oven; bake for an additional 20-25 minutes until set.
- Cool completely before dusting with powdered sugar and slicing into squares.
