Ingredients
  

Tostada Base
  • 8 pieces tostada shells store-bought or homemade
Chicken Filling
  • 2 cups shredded rotisserie chicken skin removed
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen, thawed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado sliced
  • 1/2 cup sour cream for topping
  • 1/4 cup fresh cilantro chopped

Method
 

Prepare the Tostada Base
  1. Preheat the oven to 400°F (200°C). Arrange the tostada shells on a baking sheet.
  2. Bake the tostada shells for about 5-7 minutes until they are crispy and golden.
Make the Chicken Filling
  1. In a mixing bowl, combine the shredded rotisserie chicken, black beans, corn, cumin, and chili powder. Mix well.
Assemble the Tostadas
  1. Spread a generous amount of the chicken filling on each tostada shell.
  2. Top with shredded lettuce, diced tomatoes, sliced avocado, and a dollop of sour cream.
  3. Garnish with chopped cilantro before serving.
