Ingredients
  

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 medium cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 medium red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 3 tbsp extra virgin olive oil
  • 1 juiced lemon
  • Salt to taste
  • Pepper to taste

Method
 

Cooking Instructions
  1. Rinse quinoa under cold water until clear to remove bitterness.
  2. In a medium saucepan, combine rinsed quinoa with water and a pinch of salt. Bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes until water is absorbed and quinoa is fluffy.
  4. While quinoa cooks, chop cucumber, cherry tomatoes, red onion, and olives into bite-sized pieces.
  5. In a large bowl, mix cooked quinoa with chopped veggies, crumbled feta cheese, and parsley.
  6. Drizzle with olive oil and lemon juice; season with salt and pepper before tossing gently.
  7. Serve in bowls and enjoy!
