  • 4 pieces boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 teaspoons mixed Mediterranean herbs (oregano, thyme, rosemary)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Method
 

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, herbs, salt, pepper, and paprika to create the marinade.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Ensure each piece is well-coated. Marinate in the fridge for at least one hour (overnight is ideal).
  3. Preheat your grill to medium-high heat (375°F/190°C).
  4. Remove chicken from the marinade and shake off excess liquid. Grill for 6-7 minutes on each side until cooked through (internal temperature should reach 165°F/75°C).
  5. Let the chicken rest for five minutes before slicing or serving whole with fresh herbs on top.
