Ingredients
  

Salad Base
  • 1 can chickpeas drained and rinsed
  • 1 can tuna drained
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chickpeas, tuna, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, dijon mustard, minced garlic, salt, and black pepper.
  2. Pour the dressing over the salad and toss to combine.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
