Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken thighs cut into strips
  • 2 tablespoons olive oil for marinating
  • 2 teaspoons oregano dried
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1/2 cup feta cheese crumbled
  • 1 small cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill chopped
  • 1/2 teaspoon salt
For Serving
  • 4 pita breads whole wheat or regular
  • 1 cup mixed greens
  • 1 large tomato sliced
  • 1 small red onion thinly sliced

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, oregano, paprika, garlic powder, salt, and black pepper. Add the chicken strips and toss to coat. Marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat.
Cook the Chicken
  1. Grill the marinated chicken strips for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F.
Make the Tzatziki Sauce
  1. In a mixing bowl, combine Greek yogurt, crumbled feta, grated cucumber, minced garlic, lemon juice, olive oil, chopped dill, and salt. Mix well until smooth and creamy.
Assemble the Gyros
  1. Warm the pita breads on the grill for about 1 minute. Layer the grilled chicken, mixed greens, tomato slices, and red onion on each pita.
  2. Drizzle with the creamy feta tzatziki sauce and fold the pita over to serve.
