Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Rice and Vegetables
  • 1 cup long-grain rice
  • 2 cups chicken broth or water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red onion finely chopped
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken pieces and mix well to coat. Cover and let marinate for at least 15 minutes.
Cook the Rice
  1. In a medium saucepan, bring chicken broth to a boil. Add the rice, reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed. Remove from heat and let sit covered for 5 minutes.
Cook the Chicken
  1. In a large skillet over medium heat, add the marinated chicken. Cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
Assemble the Bowl
  1. In serving bowls, layer the cooked rice, followed by the cooked chicken, cherry tomatoes, cucumber, red onion, and crumbled feta cheese. Garnish with fresh parsley.
