Ingredients
  

Meatloaf Mixture
  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 medium onion chopped
  • 1/3 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
Mashed Potato Frosting
  • 2 cups mashed potatoes
  • 1 cup cheddar cheese shredded

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Sauté the chopped onion in a skillet over medium heat until soft and translucent, about 5 minutes.
  3. In a large bowl, combine ground beef, breadcrumbs, eggs, ketchup, Worcestershire sauce, sautéed onions, salt, pepper, and garlic powder. Mix until just combined.
  4. Grease a muffin tin and fill each cup three-quarters full with the meat mixture.
  5. Bake for 20-25 minutes or until golden brown and cooked through.
  6. While cooling slightly, prepare mashed potatoes and mix in shredded cheddar and seasonings.
  7. Pipe the mashed potato frosting onto each meatloaf cupcake.
