Ingredients
  

  • 4 breasts boneless, skinless chicken
  • 2 pcs ripe mangoes diced
  • 3 tbsp freshly squeezed lime juice
  • 3 cloves garlic minced
  • 1 tsp grated ginger
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Method
 

  1. Prepare the chicken by seasoning both sides with salt and pepper.
  2. In a bowl, combine diced mangoes, lime juice, minced garlic, grated ginger, soy sauce, and honey; mix well.
  3. Heat olive oil in a skillet over medium-high heat. Sear the seasoned chicken breasts for about 6-7 minutes on each side until golden brown.
  4. Pour the mango sauce over the chicken and simmer for an additional 5-7 minutes until heated through.
  5. Serve hot over rice or alongside vegetables with extra mango or lime wedges for garnish.
