Ingredients
  

Chicken and Vegetables
  • 1.5 pounds boneless, skinless chicken breasts sliced into strips
  • 1 large red bell pepper sliced
  • 1 large green bell pepper sliced
  • 1 large yellow onion sliced
Fajita Seasoning
  • 2 tablespoons olive oil for drizzling
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Ingredients
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the sliced chicken, bell peppers, and onion.
Season the Mixture
  1. Drizzle olive oil over the chicken and vegetables.
  2. Add the chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper.
  3. Toss everything together until well coated.
Bake the Fajitas
  1. Spread the chicken and vegetable mixture evenly on a sheet pan.
  2. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and vegetables are tender.
Serve
  1. Remove from the oven and let cool for a few minutes.
  2. Serve hot, optionally with low carb tortillas or lettuce wraps.
