Ingredients
  

  • 1 lb lean ground turkey
  • 1 cup bell peppers chopped, mixed colors
  • 1 medium zucchini chopped
  • 3 cloves fresh garlic minced
  • 1 can (14.5 oz) diced tomatoes with herbs
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • ¼ cup grated Parmesan cheese

Method
 

  1. Prep your ingredients by chopping the bell peppers and zucchini into bite-sized pieces and mincing the garlic.
  2. Heat olive oil in a large skillet over medium heat. Add bell peppers and zucchini, cooking until tender, about 5-7 minutes.
  3. Push veggies to the side of the skillet; add ground turkey. Cook until browned, breaking it up as you stir.
  4. Stir in minced garlic and canned tomatoes, allowing everything to simmer for about 5 minutes.
  5. Sprinkle Italian seasoning over the mixture while stirring; adjust seasoning with salt and pepper as needed.
  6. Top with grated Parmesan cheese before serving, allowing it to melt slightly.
