Ingredients
  

Salad Base
  • 4 cups kale, chopped stems removed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Toppings
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup sunflower seeds optional

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chopped kale, cherry tomatoes, cucumber, and red onion.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until emulsified.
Combine and Serve
  1. Pour the dressing over the salad and toss to coat evenly.
  2. Top with grated Parmesan cheese and sunflower seeds if using.
  3. Serve immediately and enjoy!
