Ingredients
  

Pasta
  • 12 oz Penne pasta or any pasta of your choice
Sauce
  • 1 cup Ricotta cheese fresh
  • 1 cup Fresh spinach washed and chopped
  • 1 lemon Zest and juice for flavor
  • 2 tbsp Olive oil extra virgin
  • 1 clove Garlic minced
  • 1/2 tsp Salt to taste
  • 1/4 tsp Black pepper to taste
  • 1/4 cup Parmesan cheese grated, for serving

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare the Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the chopped spinach and cook until wilted, about 2-3 minutes.
  3. In a mixing bowl, combine ricotta cheese, lemon zest, lemon juice, salt, and pepper. Mix until smooth.
Combine and Serve
  1. Add the cooked pasta to the skillet with spinach and garlic. Pour in the ricotta mixture and toss to combine, adding reserved pasta water as needed to reach desired creaminess.
  2. Serve immediately, topped with grated Parmesan cheese.

Notes
