Ingredients
  

Chicken and Broth
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 6 cups chicken broth low sodium recommended
Vegetables
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
  • 2 cloves garlic minced
Seasoning and Garnish
  • 1 tsp dried thyme
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 medium lemon juiced and zested
  • 1/4 cup fresh parsley chopped for garnish

Method
 

Prepare the Chicken
  1. In a large pot, add the chicken breasts and cover with chicken broth. Bring to a boil.
  2. Reduce heat and simmer for about 15 minutes, or until chicken is cooked through.
Add Vegetables
  1. Add diced carrots, celery, onion, and minced garlic to the pot.
  2. Simmer for an additional 10 minutes until vegetables are tender.
Season the Soup
  1. Stir in dried thyme, salt, black pepper, lemon juice, and lemon zest.
  2. Cook for another 5 minutes to allow flavors to meld.
Serve
  1. Ladle the soup into bowls and garnish with fresh parsley before serving.
