Lemon-Basil Spaghetti

Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Sauce
  • 1/4 cup olive oil extra virgin
  • 2 cloves garlic minced
  • 1 cup fresh basil leaves chopped
  • 1 medium lemon zested and juiced
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground
Garnish
  • 1/4 cup parmesan cheese grated
  • 1 tbsp lemon zest for garnish

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the spaghetti in a colander.
Prepare the Sauce
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Stir in the lemon juice, lemon zest, chopped basil, salt, and black pepper. Cook for another 2 minutes.
Combine and Serve
  1. Add the drained spaghetti to the skillet and toss to coat in the sauce. If the pasta is too dry, add reserved pasta water a little at a time until desired consistency is reached.
  2. Serve immediately, garnished with grated parmesan cheese and additional lemon zest.

Notes
