Ingredients
  

  • 4 thighs boneless chicken
  • 1 cup full-fat coconut milk
  • 1 tbsp fresh ginger grated
  • 4 cloves garlic minced
  • 1 medium onion finely chopped
  • 2 tsp curry powder
  • 2 tbsp lime juice
  • salt to taste
  • pepper to taste
  • fresh cilantro for garnish

Method
 

  1. Prepare your ingredients by chopping onions and mincing garlic.
  2. In a large pan over medium heat, sauté the onions in oil until translucent. Add garlic and ginger; cook until fragrant.
  3. Add chicken thighs to the pan, searing them on both sides until golden brown.
  4. Pour in the coconut milk, curry powder, lime juice, salt, and pepper. Stir well and simmer for about 20 minutes until chicken is cooked through.
  5. Before serving, garnish with fresh cilantro.
