Ingredients
  

Cauliflower Base
  • 1 head Cauliflower Riced or finely chopped
  • 1 cup Mozzarella Cheese Shredded
  • 1 large Egg Beaten
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Toppings
  • 1 cup Pizza Sauce Low-carb
  • 1 cup Pepperoni Sliced
  • 1 cup Mozzarella Cheese Shredded for topping
  • 1/4 cup Parmesan Cheese Grated

Method
 

Prepare Cauliflower Base
  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, cook the riced cauliflower over medium heat until tender, about 5 minutes.
  3. In a mixing bowl, combine cooked cauliflower, mozzarella cheese, beaten egg, garlic powder, Italian seasoning, salt, and pepper.
  4. Mix well until combined.
Assemble Casserole
  1. Spread the cauliflower mixture evenly in a greased casserole dish.
  2. Spread the pizza sauce over the cauliflower base.
  3. Layer the pepperoni slices on top of the sauce.
  4. Sprinkle additional mozzarella and Parmesan cheese on top.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  2. Remove from the oven and let it cool for a few minutes before serving.
