  • 2 cups cooked pasta fusilli or penne
Dressings and Toppings
  • 1/2 cup Caesar dressing
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup halved cherry tomatoes
  • 1 cup homemade croutons
  • 2 tbsp freshly squeezed lemon juice

Method
 

Preparation
  1. Wash the kale thoroughly under cold water. Tear it into bite-sized pieces and set it aside.
  2. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse with cold water.
  3. In a bowl, whisk together the Caesar dressing ingredients until smooth (or enhance store-bought dressing with extra lemon juice and garlic).
  4. In a large mixing bowl, combine kale, cooked pasta, cherry tomatoes, croutons, and grated Parmesan cheese. Drizzle with dressing and toss until evenly coated.
  5. Serve immediately on a platter or in individual bowls, garnished with extra Parmesan if desired.
