Ingredients
  

Marinade
  • 1 cup plain yogurt Greek yogurt works well
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 4 cloves garlic minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon cayenne pepper adjust for spice preference
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Chicken
  • 2 pounds boneless, skinless chicken thighs can substitute with chicken breasts
Serving
  • 4 pieces pita bread for serving
  • 1 cup hummus optional
  • 1 cup tabbouleh optional
  • 1 cup sliced cucumbers optional
  • 1 cup sliced tomatoes optional
  • 1 cup tahini sauce optional

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine the yogurt, olive oil, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, cayenne, salt, and black pepper. Mix well.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Cook the Chicken
  1. Preheat the grill to medium-high heat or the oven to 425°F (220°C).
  2. Remove the chicken from the marinade and shake off excess. Grill for about 6-7 minutes per side or bake in the oven for 25-30 minutes, until the internal temperature reaches 165°F (75°C).
  3. Let the chicken rest for 5 minutes before slicing.
Serve
  1. Serve the sliced chicken in pita bread with hummus, tabbouleh, cucumbers, tomatoes, and tahini sauce as desired.
