Ingredients
  

Jerk Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 tablespoons jerk seasoning store-bought or homemade
  • 1 tablespoon olive oil
Mango Slaw
  • 2 cups cabbage shredded
  • 1 cup mango diced
  • 1 medium red bell pepper sliced
  • 1/4 cup cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon honey
Honey Lime Cream
  • 1/2 cup sour cream
  • 1 tablespoon honey
  • 1 tablespoon lime juice freshly squeezed
  • 1/4 teaspoon lime zest

Method
 

Prepare the Jerk Chicken
  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix the jerk seasoning with olive oil to create a paste.
  3. Rub the jerk paste all over the chicken thighs.
  4. Place the chicken on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
Make the Mango Slaw
  1. In a large mixing bowl, combine the shredded cabbage, diced mango, sliced red bell pepper, and chopped cilantro.
  2. In a small bowl, whisk together lime juice and honey, then pour over the slaw and toss to combine.
Prepare the Honey Lime Cream
  1. In a bowl, mix together sour cream, honey, lime juice, and lime zest until smooth.
Assemble the Bowls
  1. Slice the grilled jerk chicken and place it over a bed of mango slaw in each bowl.
  2. Drizzle the honey lime cream over the top and serve immediately.
