Ingredients
  

Chicken and Filling
  • 2 cups cooked chicken shredded
  • 1 cup cream cheese softened
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup jalapeños diced, fresh or pickled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Topping
  • 1 cup panko breadcrumbs
  • 2 tablespoons butter melted
  • 1/2 cup shredded cheddar cheese

Method
 

Prepare the Oven and Dish
  1. Preheat the oven to 350°F (175°C). Grease a baking dish with cooking spray or butter.
  2. In a mixing bowl, combine the shredded chicken, cream cheese, 1 cup of cheddar cheese, diced jalapeños, garlic powder, onion powder, salt, and black pepper.
Assemble the Bake
  1. Spread the chicken mixture evenly in the prepared baking dish.
  2. In another bowl, mix the panko breadcrumbs with melted butter and the remaining 1/2 cup of cheddar cheese.
  3. Sprinkle the breadcrumb mixture evenly over the chicken filling.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbly.
  2. Remove from the oven and let it cool for a few minutes before serving.
