Italian Sub Salad, Two Ways

Ingredients
  

Salad Base
  • 8 cups mixed greens such as romaine and spinach
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red onion thinly sliced
  • 1 cup pepperoncini sliced
Italian Sub Ingredients
  • 1 cup salami sliced
  • 1 cup ham sliced
  • 1 cup provolone cheese sliced
  • 1/2 cup black olives sliced
  • 1/2 cup Italian dressing store-bought or homemade
Alternate Ingredients
  • 1 cup grilled chicken sliced
  • 1 cup mozzarella cheese cubed
  • 1/2 cup basil pesto for dressing

Method
 

Prepare the Salad Base
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and pepperoncini.
  2. Toss the salad base ingredients together until well mixed.
Make the Italian Sub Salad
  1. Add the salami, ham, provolone cheese, and black olives to the salad base.
  2. Drizzle with Italian dressing and toss gently to combine.
Make the Grilled Chicken Salad
  1. For the alternate version, add the grilled chicken and mozzarella cheese to the salad base.
  2. Drizzle with basil pesto and toss gently to combine.
Serve
  1. Transfer the salad to a serving platter and enjoy immediately.
