Ingredients
  

Soup Base
  • 2 tablespoons olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 6 cups vegetable broth or chicken broth
  • 1 cup pastina tiny pasta
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 cup fresh spinach chopped
  • 1/4 cup parmesan cheese grated, for serving

Method
 

Prepare the Soup Base
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced carrots, and diced celery, cooking for another 5 minutes.
Cook the Soup
  1. Pour in the vegetable broth and bring to a boil.
  2. Add the pastina and cook according to package instructions, usually about 8 minutes.
  3. Season with salt and black pepper, then stir in the chopped spinach until wilted.
Serve
  1. Ladle the soup into bowls and sprinkle with grated parmesan cheese before serving.
