  • 1 cup unsalted pistachios, shelled
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs, room temperature
  • 3/4 cup buttermilk
  • 2 tsp pure vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In another bowl, beat the eggs with buttermilk and vanilla. Gradually add to the dry ingredients while folding gently.
  4. Fold in the pistachios without crushing them.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-60 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
