Ingredients
  

Chicken
  • 2 cups cooked chicken, shredded grilled or rotisserie chicken works well
Dressing
  • 1/4 cup honey preferably local honey
  • 2 tablespoons hot sauce adjust to taste
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
Vegetables
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup red bell pepper, diced
  • 1 cup mixed greens such as spinach or arugula
Toppings
  • 1/4 cup feta cheese, crumbled optional
  • 1/4 cup green onions, sliced for garnish

Method
 

Prepare the Chicken
  1. If using raw chicken, grill it until fully cooked, about 15-20 minutes. Let it cool and shred it.
  2. If using rotisserie chicken, simply shred the meat.
Make the Dressing
  1. In a mixing bowl, whisk together honey, hot sauce, olive oil, and apple cider vinegar until well combined.
Assemble the Salad
  1. In a large bowl, combine the shredded chicken, cherry tomatoes, cucumber, red bell pepper, and mixed greens.
  2. Drizzle the dressing over the salad and toss gently to combine.
Serve
  1. Transfer the salad to a serving platter and top with feta cheese and green onions if desired.
  2. Serve immediately and enjoy!
