High Protein Creamy Taco Soup

Ingredients
  

Protein Base
  • 1 lb ground turkey or chicken
  • 1 can black beans drained and rinsed
  • 1 can kidney beans drained and rinsed
Vegetables
  • 1 medium onion diced
  • 1 medium bell pepper diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes with green chilies
Liquids
  • 4 cups chicken broth or vegetable broth
  • 1 cup heavy cream or coconut cream for dairy-free
Spices
  • 2 tbsp taco seasoning store-bought or homemade
  • 1 tsp cumin
  • 1 tsp salt to taste
  • 1 tsp pepper to taste
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream or Greek yogurt
  • 1 cup fresh cilantro chopped

Method
 

Cook the Protein
  1. In a large pot over medium heat, add the ground turkey and cook until browned, about 5-7 minutes.
  2. Add the diced onion, bell pepper, and garlic, cooking until softened, about 5 minutes.
Combine Ingredients
  1. Stir in the black beans, kidney beans, diced tomatoes, chicken broth, taco seasoning, cumin, salt, and pepper.
  2. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
Add Cream
  1. Stir in the heavy cream and let it cook for an additional 5 minutes.
Serve
  1. Ladle the soup into bowls and top with shredded cheese, sour cream, and fresh cilantro.
