Herby Ricotta Stuffed Peppers

Ingredients
  

Peppers
  • 4 whole bell peppers any color
Ricotta Filling
  • 1 cup ricotta cheese fresh
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh parsley chopped
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg large beaten
Topping
  • 1/2 cup shredded mozzarella cheese

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. Place the peppers upright in a baking dish.
Make the Filling
  1. In a mixing bowl, combine ricotta cheese, Parmesan cheese, basil, parsley, garlic, salt, black pepper, and beaten egg. Mix until well combined.
Stuff the Peppers
  1. Spoon the ricotta mixture into each bell pepper until filled.
Bake
  1. Sprinkle shredded mozzarella cheese on top of each stuffed pepper.
  2. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.

Notes

You can add other herbs like oregano or thyme for additional flavor.
