Ingredients
  

Turkey and Vegetables
  • 1 lb ground turkey lean
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 1 cup zucchini diced
  • 2 tablespoons olive oil for cooking
Spices
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Toppings
  • 1 cup black beans cooked
  • 1 cup corn cooked
  • 1 cup cherry tomatoes halved
  • 1/2 cup cilantro chopped
  • 1/2 cup Greek yogurt as a sour cream substitute
Base
  • 2 cups brown rice cooked
  • 2 cups romaine lettuce shredded

Method
 

Cook the Turkey
  1. Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  2. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spatula, about 7-10 minutes.
  3. Stir in the zucchini and spices (chili powder, cumin, garlic powder, onion powder, salt, and pepper). Cook for an additional 5 minutes until zucchini is tender.
Assemble the Bowl
  1. In serving bowls, layer cooked brown rice and shredded romaine lettuce as the base.
  2. Top with the turkey mixture, black beans, corn, cherry tomatoes, avocado slices, and chopped cilantro.
  3. Finish with a dollop of Greek yogurt on top.
