Prepare Ingredients
- Slice the onion and bell peppers. Mince the garlic.
- Place the chicken breasts at the bottom of the crockpot.
Add Vegetables and Seasoning
- Layer the sliced onion, green bell pepper, red bell pepper, and minced garlic over the chicken.
- Sprinkle Italian seasoning, salt, and black pepper over the top.
- Pour the chicken broth over the ingredients in the crockpot.
Cook the Chicken
- Cover and cook on low for 6 hours or until the chicken is cooked through and tender.
Shred Chicken and Serve
- Remove the chicken from the crockpot and shred it with two forks.
- Return the shredded chicken to the crockpot and stir to combine with the vegetables.
- Serve the mixture on whole wheat rolls and top with shredded provolone cheese.
