- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, sauté chopped onion and bell peppers in olive oil until softened (about 5 minutes).
- Add ground beef, breaking it apart; cook until browned (7-10 minutes). Drain excess fat.
- Stir in canned tomatoes and seasoning mix; simmer for 10 minutes.
- Fold in frozen mixed vegetables; heat through for about 5 minutes.
- In a greased baking dish, layer half of the beef mixture, half of the cheddar cheese, and top with potato chips or tater tots. Repeat layers.
- Bake uncovered for 25-30 minutes until bubbly and golden brown.
