Ingredients
  

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped assorted colors
  • 1 can (14.5 oz) diced tomatoes with herbs
  • 2 cups frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt to taste
  • Pepper to taste
  • 2 cups potato chips or tater tots

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, sauté chopped onion and bell peppers in olive oil until softened (about 5 minutes).
  3. Add ground beef, breaking it apart; cook until browned (7-10 minutes). Drain excess fat.
  4. Stir in canned tomatoes and seasoning mix; simmer for 10 minutes.
  5. Fold in frozen mixed vegetables; heat through for about 5 minutes.
  6. In a greased baking dish, layer half of the beef mixture, half of the cheddar cheese, and top with potato chips or tater tots. Repeat layers.
  7. Bake uncovered for 25-30 minutes until bubbly and golden brown.
