Ingredients
  

Filling
  • 1 lb ground beef 80% lean
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup cheddar cheese shredded
Sauce
  • 2 cups enchilada sauce store-bought or homemade
  • 1 cup sour cream for topping
Wraps
  • 8 pieces corn tortillas

Method
 

Prepare the Filling
  1. In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
  2. Add chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in cumin and chili powder, mixing well. Remove from heat and stir in shredded cheese.
Assemble the Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. Warm the corn tortillas in a dry skillet or microwave to make them pliable.
  3. Spoon a portion of the beef filling onto each tortilla, roll them up, and place seam-side down in a baking dish.
  4. Pour enchilada sauce over the rolled tortillas and sprinkle with additional cheese if desired.
Bake
  1. Bake in the preheated oven for 20-25 minutes, until heated through and cheese is bubbly.
  2. Serve hot, topped with sour cream.
