Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and cut into wedges
Olive Oil
  • 1/4 cup extra virgin olive oil
Herbs and Spices
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Feta Cheese
  • 1 cup feta cheese crumbled
Lemon
  • 1 tablespoon lemon juice freshly squeezed
Fresh Herbs
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Potatoes
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the potato wedges with olive oil, oregano, garlic powder, salt, and pepper. Toss until evenly coated.
Roast the Potatoes
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 30-35 minutes, or until golden brown and crispy, turning halfway through.
Add Feta and Serve
  1. Remove the potatoes from the oven and sprinkle crumbled feta cheese over the top.
  2. Drizzle with lemon juice and garnish with chopped parsley before serving.
