Ingredients

Chicken and Marinade
  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat Greek yogurt
  • 4 cloves fresh garlic, minced
  • 1 whole lemon, juiced
  • 2 tsp dried oregano
Tzatziki Sauce
  • 1 medium cucumber, grated
  • 3 tbsp extra virgin olive oil
Pita and Toppings
  • 4 pieces whole wheat pita breads

Equipment

  • Grill
  • Mixing bowl
  • Skillet

Method

Marinating and Cooking
  1. In a bowl, mix Greek yogurt, minced garlic, lemon juice, oregano, salt, and pepper to create the marinade.
  2. Add chicken breasts to the marinade, ensuring they are well coated. Marinate for at least 1 hour or overnight.
  3. Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F (75°C). Let it rest before slicing.
Preparing Tzatziki Sauce
  1. Grate the cucumber and remove excess moisture. In a bowl, combine the cucumber with remaining Greek yogurt, a bit more garlic, lemon juice, and season with salt.
Assembling the Gyros
  1. Warm pita bread on the grill or in a skillet until soft.
  2. Slice the chicken and layer it on the warmed pita along with tzatziki and any optional toppings like lettuce or tomatoes.
