Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
Icing
  • 2 cups powdered sugar
  • 2 tbsp milk adjust for consistency
  • 1 tsp vanilla extract
Decoration
  • 1/2 cup chocolate chips for eyes

Method
 

Prepare Cookie Dough
  1. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Shape Cookies
  1. Preheat the oven to 350°F (175°C).
  2. Roll out the dough on a floured surface to about 1/4 inch thick.
  3. Use a ghost-shaped cookie cutter to cut out cookies and place them on a baking sheet lined with parchment paper.
  4. Bake for 10-12 minutes or until the edges are lightly golden.
Make Icing and Decorate
  1. In a bowl, mix powdered sugar, milk, and vanilla extract until smooth.
  2. Once cookies are cool, use the icing to cover the cookies in a ghostly white layer.
  3. Place chocolate chips on the icing to create eyes.
