- Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- In a bowl, mix minced garlic, olive oil, salt, pepper, and dried herbs; rub mixture over chicken breasts.
- Toss baby potatoes in olive oil, salt, pepper, and half of the parmesan cheese.
- Arrange seasoned chicken and potatoes in the dish; sprinkle remaining parmesan on top.
- Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
- Let rest for a couple of minutes before serving.
