Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated parmesan cheese
  • 1.5 lbs baby potatoes, halved or quartered
  • 3 tbsp extra virgin olive oil
  • 2 tsp dried Italian herbs (oregano and basil)
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, mix minced garlic, olive oil, salt, pepper, and dried herbs; rub mixture over chicken breasts.
  3. Toss baby potatoes in olive oil, salt, pepper, and half of the parmesan cheese.
  4. Arrange seasoned chicken and potatoes in the dish; sprinkle remaining parmesan on top.
  5. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
  6. Let rest for a couple of minutes before serving.
