  • 2 medium carrots sliced
  • 2 medium zucchini sliced
Seasoning
  • 4 cloves garlic minced
  • 3 tablespoons olive oil extra virgin
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the cubed potatoes, sliced carrots, and zucchini.
  3. Add minced garlic, olive oil, thyme, rosemary, salt, and pepper to the vegetables.
  4. Toss everything together until the vegetables are well coated.
Roasting
  1. Spread the vegetable mixture evenly on a baking sheet.
  2. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and golden brown.
  3. Remove from the oven and let cool for a few minutes before serving.
