Ingredients
  

  • 2 cups fresh cucumbers, sliced
  • 1 cup cooked shrimp, chopped
  • 1/2 cup diced red onion
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh herbs (dill or cilantro), chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Method
 

  1. Rinse cucumbers under cool water, then slice them thinly.
  2. Chop cooked shrimp into bite-sized pieces if necessary.
  3. Halve cherry tomatoes using a sharp knife.
  4. In a large bowl, combine cucumbers, shrimp, red onion, cherry tomatoes, and herbs; toss gently.
  5. Drizzle olive oil and lemon juice over the mixture; season with salt and pepper. Toss again until well combined.
