Method
Prepare the Mixture
- In a large mixing bowl, combine the thawed hash browns, sour cream, cream of onion soup, French onion dip, and 1 cup of shredded cheddar cheese. Mix well until fully combined.
- Spread the mixture evenly into a greased 9x13 inch baking dish.
Bake the Casserole
- Preheat the oven to 350°F (175°C).
- Bake the casserole in the preheated oven for 30 minutes.
- After 30 minutes, remove the casserole from the oven and sprinkle the remaining 1 cup of shredded cheddar cheese and French fried onions on top.
- Return to the oven and bake for an additional 15 minutes, or until the cheese is melted and the top is golden brown.
Serve
- Remove from the oven and let it cool for a few minutes before serving. Sprinkle with paprika if desired.

This dish can be prepared ahead of time and refrigerated before baking. Just add an extra 10-15 minutes to the baking time if baking from cold.
