French Onion Funeral Potatoes

Ingredients
  

Potatoes
  • 4 cups hash browns thawed if frozen
Creamy Mixture
  • 1 cup sour cream can substitute with Greek yogurt
  • 1 can cream of onion soup
  • 1 cup French onion dip or any onion dip
  • 2 cups shredded cheddar cheese divided
Topping
  • 1 cup French fried onions for topping
  • 1 teaspoon paprika optional for garnish

Method
 

Prepare the Mixture
  1. In a large mixing bowl, combine the thawed hash browns, sour cream, cream of onion soup, French onion dip, and 1 cup of shredded cheddar cheese. Mix well until fully combined.
  2. Spread the mixture evenly into a greased 9x13 inch baking dish.
Bake the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. Bake the casserole in the preheated oven for 30 minutes.
  3. After 30 minutes, remove the casserole from the oven and sprinkle the remaining 1 cup of shredded cheddar cheese and French fried onions on top.
  4. Return to the oven and bake for an additional 15 minutes, or until the cheese is melted and the top is golden brown.
Serve
  1. Remove from the oven and let it cool for a few minutes before serving. Sprinkle with paprika if desired.

Notes

This dish can be prepared ahead of time and refrigerated before baking. Just add an extra 10-15 minutes to the baking time if baking from cold.
