Ingredients
  

Rice and Base Ingredients
  • 1 cup long-grain rice uncooked
  • 2 cups chicken broth or vegetable broth
  • 1 medium yellow onion thinly sliced
  • 2 tablespoons butter unsalted
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Garnish Ingredients
  • 1/4 cup grated Parmesan cheese optional
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Prepare the Onions
  1. In a large saucepan, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 15-20 minutes.
  2. Season the onions with salt and pepper during the cooking process.
Cook the Rice
  1. Once the onions are caramelized, add the uncooked rice to the saucepan and stir to coat the rice with the butter and onions.
  2. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
Finish and Serve
  1. Remove the saucepan from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  2. Stir in the grated Parmesan cheese if using, and garnish with chopped parsley before serving.
