Ingredients
  

Quinoa Base
  • 1 cup quinoa rinsed
  • 2 cups water
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1 cup red onion finely chopped
  • 1 cup fresh parsley chopped
Dressing
  • 1 3/4 olive oil
  • 1 1 lemon juiced
  • 1 teaspoon salt
  • 1 1/2 black pepper
  • 1 teaspoon garlic powder

Method
 

Cook Quinoa
  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  2. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and let it cool.
Prepare Vegetables
  1. While quinoa is cooking, chop all the vegetables and place them in a large mixing bowl.
Make Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, salt, black pepper, and garlic powder.
Combine Salad
  1. Once quinoa is cooled, add it to the bowl with the vegetables. Pour the dressing over the salad and toss to combine.
  2. Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
