Prepare the Ingredients
- Peel and cube the potatoes, peel, core, and dice the apples, and chop the onion and carrots.
- In a large pot, heat the olive oil over medium heat.
Cook the Vegetables

- Stir in the diced apples and cook for another 5 minutes.
Add Cider and Potatoes
- Pour in the apple cider and add the cubed potatoes.
- Season with cinnamon, nutmeg, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes or until the potatoes are tender.
Mash and Serve
- Use a masher to mash the stew to your desired consistency.
- Serve hot, garnished with fresh parsley.
