Ingredients
  

Main Ingredients
  • 4 cups apple cider preferably unfiltered
  • 2 lbs potatoes peeled and cubed
  • 3 medium apples peeled, cored, and diced
  • 1 cup carrots diced
  • 1 cup onion chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Ingredients
  1. Peel and cube the potatoes, peel, core, and dice the apples, and chop the onion and carrots.
  2. In a large pot, heat the olive oil over medium heat.
Cook the Vegetables
  1. Add the chopped onion and carrots to the pot and sauté for about 5 minutes until softened.
  2. Stir in the diced apples and cook for another 5 minutes.
Add Cider and Potatoes
  1. Pour in the apple cider and add the cubed potatoes.
  2. Season with cinnamon, nutmeg, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 30 minutes or until the potatoes are tender.
Mash and Serve
  1. Use a masher to mash the stew to your desired consistency.
  2. Serve hot, garnished with fresh parsley.
