  • 3-4 pieces boneless, skinless chicken breasts about 1 lb
  • 2 cups mixed bell peppers sliced, red, yellow, green
  • 1 large sweet onion sliced
Seasonings and Toppings
  • 2 tablespoons taco seasoning
  • 2 cups shredded cheddar cheese
  • ½ cup sour cream
  • 2 tablespoons olive oil
  • fresh cilantro optional, for garnish

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Heat olive oil in a large skillet over medium heat. Sauté sliced bell peppers and onions until softened (5-7 minutes).
  3. Add diced chicken and taco seasoning to the skillet. Cook until chicken is no longer pink (8-10 minutes).
Layering and Baking
  1. Layer half of the chicken mixture in the prepared baking dish, followed by half of the cheese.
  2. Repeat layers and top with remaining cheese.
  3. Bake for 25-30 minutes until golden brown and bubbly. Let cool slightly before serving, garnished with cilantro if desired.
