  • 1 lb boneless, skinless chicken breasts about 3-4 breasts
  • 2 cups mixed bell peppers sliced (red, yellow, green)
  • 1 large sweet onion sliced
  • 2 tablespoons taco seasoning
  • 2 cups shredded cheddar cheese
  • ½ cup sour cream
  • 2 tablespoons olive oil
  • fresh cilantro optional, for garnish

Method
 

Cooking Steps
  1. Preheat oven to 375°F (190°C) and spray a 9x13-inch baking dish with nonstick cooking spray.
  2. Heat olive oil in a large skillet over medium heat. Sauté sliced bell peppers and onions until softened (5-7 minutes).
  3. Add diced chicken and taco seasoning to the skillet. Cook until chicken is no longer pink (8-10 minutes).
  4. Layer half of the chicken mixture in the prepared baking dish, followed by half of the cheese. Repeat layers and top with remaining cheese.
  5. Bake for 25-30 minutes until golden brown and bubbly. Let cool slightly before serving, garnished with cilantro if desired.
