Ingredients
  

Sushi Cups
  • 1 cup cooked sushi rice cooled
  • 2 sheets nori cut into small squares
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
Salmon Filling
  • 1 pound salmon fillet skinless
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger grated
  • 1 clove garlic minced
Toppings
  • 1 avocado sliced
  • 2 tablespoons green onions chopped
  • 1 tablespoon sesame seeds for garnish
  • 1 tablespoon wasabi optional

Method
 

Prepare the Sushi Rice
  1. In a mixing bowl, combine the cooked sushi rice, rice vinegar, sugar, and salt. Mix well and set aside.
  2. Preheat the oven to 375°F (190°C).
Prepare the Salmon Filling
  1. In a bowl, mix the salmon fillet with soy sauce, sesame oil, ginger, and garlic.
  2. Place the salmon mixture on a baking sheet and bake for 15-20 minutes or until cooked through.
Assemble the Sushi Cups
  1. Grease a muffin tin and press a square of nori into each cup to form a shell.
  2. Fill each nori cup with a spoonful of sushi rice, followed by the baked salmon.
  3. Top with avocado slices, green onions, and sesame seeds.
Serve
  1. Serve warm with wasabi on the side if desired.
