Ingredients
  

  • 1 lb boneless, skinless chicken breasts about 3-4 pieces
  • 2 tbsp taco seasoning
  • 8 count small corn or flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup sliced jalapeños optional
  • 1/2 cup sour cream
  • 2 tbsp olive oil

Method
 

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with taco seasoning. Marinate for at least 20 minutes if possible.
  3. Heat olive oil in a skillet over medium heat and cook chicken until golden brown, about 6–8 minutes per side. Shred the cooked chicken using two forks.
  4. Fill tortillas with shredded chicken and top generously with both cheeses.
  5. Place filled tacos in the oven for 10–12 minutes until cheese is bubbly and golden.
