Ingredients
  

  • 4 large carrots fresh, grated
  • 1/2 cup flat-leaf parsley fresh, chopped
  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice from about 1 lemon
  • Salt to taste
  • Pepper to taste
  • 1/4 teaspoon ground cumin

Method
 

  1. Grate the carrots using a box grater or food processor.
  2. In a bowl, whisk together olive oil, lemon juice, salt, pepper, and cumin until smooth.
  3. In a large mixing bowl, combine grated carrots with chopped parsley. Drizzle dressing over the salad and toss well.
  4. Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  5. Serve in a lovely dish garnished with extra parsley if desired.
