  • 1 medium bell pepper julienned
  • 1 medium cucumber sliced

  • ¼ cup fresh mint chopped
  • ¼ cup peanuts chopped, lightly toasted
  • 2 tbsp lime juice about 1 lime
  • 2 tsp grated fresh ginger
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar

Method
 

  1. Boil water in a pot, add rice noodles, and cook according to package instructions until tender. Drain and rinse under cold water.
