  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup diced bell peppers red or green
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • Optional toppings sour cream, shredded cheese, fresh cilantro

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic; sauté until translucent (about 5 minutes).
  2. Increase heat slightly and add ground turkey. Cook until browned evenly (about 7-10 minutes), breaking it apart with a spatula.
  3. Stir in diced bell peppers and canned tomatoes (with juices); mix well.
  4. Add chili powder, cumin, salt, and pepper; stir until all ingredients are coated.
  5. Gently fold in the drained beans; heat through for about 5 minutes.
  6. Reduce heat to low, cover, and let simmer for at least 20 minutes to deepen the flavors.
