  • 1 lb fresh or frozen shrimp, peeled and deveined
Vegetables
  • 1 cup cucumbers, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
Condiments
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
Cheese and Olives
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted
Spices
  • 1 tsp dried oregano

Method
 

Cooking Process
  1. Rinse shrimp under cool water and pat dry. Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque.
  2. In a large bowl, combine chopped cucumbers, halved cherry tomatoes, and sliced red onion.
  3. In a small bowl, whisk together remaining olive oil, lemon juice, oregano, salt, and pepper.
  4. Add cooked shrimp to the vegetable mixture along with feta cheese and olives. Drizzle dressing over the top and toss gently.
  5. Chill in the fridge for at least 15 minutes before serving for enhanced flavors.
