- Grate the carrots using a box grater or food processor.
- In a bowl, whisk together olive oil, lemon juice, salt, pepper, and cumin until smooth.
- In a large mixing bowl, combine grated carrots with chopped parsley. Drizzle dressing over the salad and toss well.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
