Ingredients
  

  • 2 cups fresh cucumbers chopped
  • 1 cup sweet bell peppers mixed colors, sliced
  • 1/4 cup red onion diced
  • 1 cup cherry tomatoes halved
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar or apple cider vinegar
  • Salt to taste
  • Pepper to taste

Method
 

  1. Wash and chop cucumbers into bite-sized pieces. Slice bell peppers into thin strips.
  2. In a large bowl, combine chopped cucumbers, sweet peppers, diced red onion, and halved cherry tomatoes.
  3. In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
  4. Drizzle the dressing over the mixed veggies and toss gently until well-coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
